Hands down, this is one of our favorite recipes in my house. It’s been on repeat recently! Loved by all, healthy, high protein, and fits into mommy’s macros seamlessly. And don’t worry if you don’t have a large cast iron skillet - you can make this in a baking pan, either 13x9 or 8x8.
Ingredients:
• 1 cup Kodiak Buttermilk power cake mix
•1 cup water
•1/2 cup liquid egg whites
•1/2 cup low fat mozzarella shredded cheese
•1 tbsp Hidden Valley Ranch seasoning
•dash of garlic powder
•20 turkey pepperoni slices
Directions:
Preheat your oven to 425. In a mixing bowl or large Pyrex batter bowl, mix kodiak cake mix, water and 1/4 cup of egg whites. (Save the extra 1/4 cup egg whites for later.) mix well until batter is formed. Pour batter onto a well greased cast iron skillet or baking pan, this forms your base. We will bake the base first by placing your skillet/pan in the oven and set the timer for 8-10 min keeping an eye until it starts to brown slightly around edges. Next, whip your 1/4 cup egg whites briskley with the HVR seasoning and garlic powder. After 8-10 min remove your pan/skillet from the oven, pour your whisked egg whites over the base. Add your cheese and turkey pepperoni on top of egg white mixture. It’s okay if the egg whites absorb into the base, it will cook all together nicely and really fluff up your pizza. Return to the oven for another 5-10 minutes until cheese is melted and bubbly. 🤤🍕 Let your pizza cool for a few minutes before serving. **TIP for skillet pizza: Using a large metal spatula, first break the edges around the pizza using the spatula until the pizza is no longer stuck to skillet. Then swiftly scoop under whole pizza, supporting with your free hand and carefully transfer to cutting bored where you can slice using your pizza cutter.
(If you used a pan, just cut directly in the pan into square slices.)
