I LOVE a good sugar cookie! This is your Classic Christmas sugar cookie, but in a blondies form. *Bonus* they are a little lightened up! Something we can all feel good about snacking on this Christmas season!👌😉
Ingredients:
• 2 cups all purpose flour
• 1 scoop vanilla protein powder (preferably a whey/casein blend - it will bake better!)
• 1/2 cup light brown sugar
• 1/2 cup granulated Stevia or Splenda
• 1/3 cup light butter (room temp)
• 1 large egg
• 3/4 cup unsweetened applesauce
• 2 tsp vanilla extract
• 1 container whipped vanilla frosting
• sprinkles of choice (optional)
Directions:
Start by preheating your oven to 350 degrees. Spray a 9x12” baking dish with cooking spray or line with parchment paper. In a large bowl, combine the butter, brown sugar, stevia/splenda, and vanilla extract. Beat with a hand mixer until smooth. Add in your egg and applesauce and beat again until smooth. Then add in your flour and protein powder and stir until all dry ingredients are incorporated well. Pour your batter into pan and even out so the top is smooth. Bake for 20-25 minutes or until the center is set. Let your blondies cool to room temperature and place in the fridge for an hour or so. spread your frosting evenly over your blondies and top with sprinkles!! Cut into 12 squares/bars and enjoy!
*Best if stored in an airtight container in fridge.
