Here’s a quick, high protein, high fiber, low carb, low calorie (& full of color! 🍅🥬) dinner idea for anyone who’s tracking and may struggle for dinner ideas that keep you within your daily goals.
Ingredients:
•2 cups baby spinach
•5oz ground lean chicken
•2 cups frozen cauliflower rice stir fry (I used Costco‘s Organic riced cauliflower stir fry)
•2 tbsp low sodium soy sauce
•1 whole Roma tomato
•Hidden Valley Ranch Seasoning (optional)
Directions:
Start by cooking your ground chicken on the stove top until browned. I add in some paprika, garlic powder, onion powder, salt and pepper while cooking. Set aside. Spray your skillet with EVOO. Add your cauliflower stir fry to the skillet and begin to cook. add in the soy sauce and whatever other spices you prefer during this time. I added garlic powder, onion powder, and a sprinkle of HVR seasoning. Cook until most of the moisture is evaporated and rice begins to brown/char. Lay your cooked cauliflower rice on a bed of spinach including your chopped tomato. Finally, top with your ground chicken. I chose to dress my plate with another sprinkle of HVR & Siracha because, if you’re like me...you never have enough spice! 🌶🧑🍳👌
