There‘s no reason you cant still enjoy your favorite foods all while staying on track with your goals. This dish is perfect for entertaining, used as an appetizer or a weeknight dinner served up with some fresh salads!👌
Ingredients:
•2 chicken breasts (thawed)
•low sodium chicken broth
•1 bag cauliflower rice (frozen)
• Salt & Pepper
•2 tbsp plain Greek yogurt
•4 tbsp fat free cream cheese
•2 tbsp hidden valley ranch seasoning
•1/2 cup franks hot sauce (or as much as you prefer)
•low fat shredded mozzarella cheese
Directions:
Start by throwing your chicken breasts with a splash of low sodium chicken broth into crockpot and cook on low for 3 hours or until chicken is cooked. (internal temp of 165 degrees) Cook your cauliflower rice according to directions in microwave.
When chicken is cooked, remove from crockpot to shred. Once shredded, return to crockpot with another splash of chicken broth. Add cauliflower rice, salt and pepper. Add 2 tbsp greek yogurt, 4 tbsp fat free cream cheese, ranch seasoning and hot sauce and stir to combine. I used Frank‘s Hot sauce here, it has a nice Buffalo flavor. Cook on low for another 30 min or so. Top with 1 tbsp mozzarella cheese on each serving. Enjoy! ✨
