After many trial and error takes at a yummy protein cookie dough, I have finally perfected the recipe! This is literally the perfect way to crush those sweet tooth cravings at the end of a long day all while hitting your daily protein goals for the day!
Ingredients:
•1/2 cup coconut flour (or almond flour)
•1/2 cup Kodiak power cake mix
•2 scoops Vanilla whey casein blend protein
•1 tbsp Swerve brown sugar substitute (or Splenda brown sugar substitute)
•2 tbsp Stevia (2 packets)
•1/2 cup unsweetened applesauce
•2 tbsp Cashew butter (or almond butter)
•1/2 tsp Cake batter extract (or butter extract)
•1/4 cup unsweetened almond milk
•6 tbsp Marshmallow Fluff
•4 tsp rainbow sprinkles
Directions:
Start by adding all ingredients EXCEPT almond milk to a large bowl. Mix on low-med speed with either standing mixer or hand mixer. Add the almond milk slowly as you mix until thick dough forms. Fold in 2 tsp sprinkles and 3 tbsp of marshmallow Fluff with spatula (do not mix in completely). Divide into 3 servings. Store in airtight containers in refrigerator for up to one week.
***When ready to eat, serve topped with 1 tbsp marshmallow Fluff and 1 tsp rainbow sprinkles as shown below.
